El maíz

Como buen mexicano, y sobre todo originario de este jirón de la patria del sureste de Tabasco, donde a pesar de las nuevas normas de consumo para “la salud”, se sigue la tradición de “tomar” maíz, en forma de bebida fresca, el apreciado “pozol”, combinación de masa de maíz con cacao, hemos crecido así varias generaciones sin dejar el hábito del “chorote”. Es pues, el maíz de vital importancia en todo México, por su diversidad en el consumo, y sobre todo por el arraigo que tenemos de acompañar nuestros alimentos con la tortilla de maíz.
La producción mundial de estas semillas alcanzó los 880 millones de toneladas en el año 2001. Comparando con los 570 millones de toneladas de trigo o los 400 millones de arroz, se advierte la importancia básica a nivel mundial del maíz, no sólo económicamente sino a todos los niveles. Estados Unidos es el mayor productor con cerca del 45% de la producción total mundial (FAO, 2003).
